He started his career in Osaka and then moved to Germany, where he trained at several star-ranked restaurants.

 

After returning to Japan, he worked as a head chef in Tokyo, and then became head chef at the residence of the Japanese ambassador overseas.

 

He then worked as a sous chef at the restaurant in the Foreign Correspondents' Club of Japan, and is currently active in menu development, catering, and as a visiting chef for private homes.

 

His cooking is based in French, but he is also well-versed in Japanese and European cuisine, and specializes in dishes that use seasonal ingredients and Japanese cooking methods.

 

He also holds multiple wine-related qualifications, including a sommelier qualification and WSET, and can handle pairings, etc.
