■ Profile (Self-Introduction) Born in 1970, Shimizu studied French cuisine, primarily at hotels and restaurants, for three years, and also taught ethnic cuisine. He has been involved in the launch of several restaurants as an opening chef. While working at a French restaurant, he was inspired by the word "chouchou" (favorite) from a chef there, and opened Chez Chouchou in Komaki City, Aichi Prefecture, in 2003. After his father passed away from cancer in 2012, he reevaluated his diet and, under the motto "Your body is made from what you eat," chose ingredients free from pesticides and additives. He also devotes himself to nutrition education as a bridge to the next generation, holding monthly parent-child cooking classes and visiting elementary schools to teach about food. In addition to French cuisine, Shimizu is also able to accommodate a wide range of requests for dishes he can make.

 

Minimum travel fees start from ¥70,000 on weekdays and ¥95,000 on weekends and holidays. (Lodging is available for those living far away, and is negotiable.)
