I entered the culinary world at the age of 22, gaining extensive experience in Italian cuisine—ranging from casual trattorias to formal ristorantes—and further honing my skills at French restaurants. Through numerous visits to Italy, I immersed myself in local food culture and regional specialties; simultaneously, I incorporated Japanese culinary techniques to create dishes that highlight the best of seasonal domestic ingredients. I am now in my ninth year as the chef at "colours" in Roppongi. I personally visit producers across the country—going straight to the fields and fishing grounds—to engage with unique, seasonal Japanese ingredients and craft Italian cuisine that maximizes their inherent appeal. Whether for anniversaries, home parties, or business entertainment, I propose personalized tasting menus, delivering a special dining experience where guests can appreciate not only the flavors of the food and wine but also the stories and passion behind the ingredients.
